Colin Molloy
master butcher
Colin started his working career at age 16, at his father Jack’s shop in St John’s Park, Waterford.
After a 5 year apprenticeship under master butcher George Gill he went on to open shops with his family in Clonmel, Killarney, Tralee, Mallow, Dungarven, Tramore, and Ferrybank – which now has his name over the door.
Christy Jacob

Christy started working with Jack Molloy back in 1979, at the age of 15. He brings with him years of experience and although many things have changed over time, he remains true to the craft, as it was back then. Derek Kelly

Derek has 35 years experience in the butchery trade. Having worked in various shops in Limerick, Shannon, Galway, Roscrea and Waterford. He manages our online shop and delivery service.
